Ingredients

  • 5g salt
  • 220g wheat flour
  • 120ml oil for the dough
  • 370ml water
  • 1 tbsp yellow onions, sliced
  • 2 garlic cloves, minced
  • ½ tbsp oil for frying
  • 5g dried shrimps, blended
  • 1 curry leaves stalk
  • 1 1⁄2 tsp curry powder
  • 320g potatoes, diced
  • Oil for deep frying

  • 1 electronic baking scale
  • 1 rolling pin
  • 1 deep pot for frying

Curry Puff Recipe

Directions

  • Mix salt and flour in a bowl. Set aside.
  • Heat the 120ml oil in a pan at high heat. Pour the hot oil into the flour mixture. Mix well. Then add 70ml of water and knead until the dough comes together. Place the dough in the refrigerator.
  • Fry the sliced onions and minced garlic with oil until fragrant. Add the blended dried shrimps, curry leaves and curry powder. Then, add the diced potatoes. Add the remaining 300ml of water to cover the ingredients and simmer at low heat until the potatoes are soft.
  • Separate the dough into balls weighing approximately 35g each. Flatten the dough with a rolling pin until they are about 0.2cm thick. Place the potato filling in the middle of the dough.
  • Fold the dough in half to create a semicircle. Pinch the edges of the dough together to prevent the filling from falling out.
  • Deep fry the curry puffs at low to medium heat until golden brown. Serve while hot.

Baked Curry Puffs

We deep-fried our puffs for a crispy and flaky crust in our curry puff recipe. However, instead of frying, the curry puffs can also be baked. Pop your curry puffs in the oven and bake them at 200°C for 20 minutes. They are just as tasty but not as oily as the fried ones.
